Chelle’s Cookbook: Asian Cuisine

I will be adding more recipes to this section of “Chelle’s Cookbook” but I wanted to get my Thai green curry recipe up to share.  After years of trying different ingredients, this one  is a hit with the family.

Green Curry with Chicken

This recipe is spicy enough to drain your sinuses and in this instance, chili sauce doesn’t enhance it.  You can make green curry with beef or shrimp instead of chicken, just use the same weights and cut lean raw beef into strips, similar to the chicken breast.  I begin the process by starting jasmine rice on the rice setting in my Instant Pot:

  • 1-1/2 cups of jasmine rice
  • 1-1/2 cups water
  • Splash of olive oil

Prepare these ingredients as detailed, adding each incrementally to your heated wok: 

Ingredients
  • 2 lbs chicken breast, cut into thin 1/16″ strips about 1″ x 2″

  • 4 – medium carrots skinned and cut into thin 1/16″ strips about 1/2″ x 2″

  • 8 – yellow and red sweet peppers deseeded, and cut into thin 1/16″ strips about 1/4″ x 2″

  • 3/4 of a big box (about six handfuls) of fresh baby spinach leaves

  • 1 – 4oz can of Maesri green curry paste

  • 1 – 13.5oz can of A Taste of Thai unsweetened coconut milk (first pressing)

  • 1 – 13.5oz can of Thai Kitchen unsweetened coconut milk

  • 1 – 2 tbsp brown sugar

Instructions
  • Heat 2 tbsp olive oil in a wok on medium setting
  • Add chicken and carrots and cook until the chicken is half done
  • Add peppers and spinach and cook until the chicken is completely done and spinach has wilted down
  • Add coconut milk, green curry paste and brown sugar and simmer for about 10 minutes
  • Serve over cooked jasmine rice and provide garnishes in a separate condiment bowl to add to individual bites

Changing Each Bite

Thin sliced or small bits of a prepared topping added to your bowl before each bite, changes the entire experience.  Play with these “garnishes” to find your favorite flavor combination: 

Garnish for Individual Bites
  • Cut a lime into 1/2 wedges to squeeze onto a bite in your bowl
  • Thinly slice a fresh jalapeno to add a ring onto a bite in your bowl
  • Wash/dry several fresh sweet basil leaves to add a leaf onto a bite in your bowl
  • If you aren’t adverse to cilantro, you can add a couple of leaves onto a bite in your bowl
